Traditional British Pudding

Pastry
- 250 g plain flour
- 125 g butter
- 1 tblsp sugar
- 1 egg
- cold water to bind
- Filling
- 1 kg cooking apples
- 2 tsp cinnamon
- 3 tblsp brown sugar
- 2 lemons
Instructions
- Rub butter into flour until mixture resembles breadcrumbs and add sugar
- Beat egg and stir into flour then add enough cold water until mixture binds together
- Roll out half of the pastry to line pie dish
- Peel and core apple and chop into small pieces
- Add cinnamon, brown sugar and lemon juice to apple
- Fill pie with chopped apple
- Roll out remaining pastry and place on top of apple
- Seal edges and brush with beaten egg and bake in oven until browned
Notes
- Try different fruit fillings e.g apple and blackberry, plum, blackcurrant, pear, apricot

Flat Seeded Bread

Easy tasty bread, great for parties and picnics

Ingredients
- 500 g strong plain flour
- 25 g yeast
- 1/2 tsp salt
- 280 ml water
- 1 tbsp olive oil
- 1 egg white beaten
- sesame seeds
- poppy seeds
- fennel seeds
Instructions
- Combine flour, yeast, salt and water to from a dough
- Knead for 5 minutes until smooth and elastic
- Leave to rest for 10 minutes
- Divide into balls and roll out into flat rounds
- Brush bread with egg white and scatter with seeds of your choice
- Bake in oven for about 15 mins until they puff and brown
Notes
- Can be re- heated in oven if you wish to serve warm. If making into shaped rolls rather than flat rounds leave to rise for approx 20 mins before baking

Stuffed Marrow

A favourite summer supper dish

Ingredients
- 1 kg minced lamb
- 2 onions
- 4 sticks celery
- 1 tblsp paprika
- 2 tsp cinnamon
- 1 tsp chilli powder
- 1 tblsp ground allspice
- 500 g passata
- 6 tomatoes
- 1 kallo beef stock cube
- 1 tblsp olive oil
- 75 g sun dried tomatoes
- 1 tsp rosemary
- 4 cloves garlic
- 2.5 kg marrow
- Grated Cheese
Instructions
- Immerse tomatoes in boiling water and leave for a few mins
- Cut sun dried tomatoes into small pieces
- Chop rosemary
- Drain tomatoes and peel off skins and then chop
- Slice onion and celery, crush garlic and fry in olive oil until softened
- Add minced lamb
- When lamb has browned add passata, spices, sun dried tomato, tomato, beef stock and rosemary
- Simmer until lamb is tender
- Slice marrow and remove seeds and boil rings under tender
- Fill marrow rings with lamb mix
- Top with grated cheese and put in oven until cheese has melted and filling is hot
Notes
- For a meat free filling use cooked green lentils instead of lamb.
- Also good with minced beef or bacon with chicken livers

Cream Meringues with Blackberry Coulee

Crunchy, creamy and sweet treat

Meringue
- 4 egg whites
- 225 g caster sugar
Blackberry Coulee
- 300 g blackberries
- 2 - 3 tblsp sugar to taste
Cream
- 300 ml double cream
- 1 tblsp sugar
Instructions
- Line baking sheets with non-stick paper
- Whisk egg whites until stiff
- Whisk in half of the sugar gradually until stiff
- Add remaining sugar
- Pipe meringue mixture onto baking sheets
- Bake for about 2 hours until meringues are dry and will lift off the paper easily
- Cook blackberries in pan until juices run
- Sweeten with sugar and push through sieve to remove seeds
- Allow to cool
- Beat cream until thick and stir in sugar
- Serve meringues with cream and blackberry coulee
Notes
- Also good served with fresh fruit such as strawberries or raspberries.
- Crush meringues and mix with strawberries and cream to make eton mess
