Spooky Halloween Cup Cakes

Cake Mix
- 200 g butter
- 200 g caster sugar
- 200 g SR flour
- 4 eggs
- ½ tsp baking powder
- 1 tsp vanilla
Butter Icing
- 110g icing sugar
- 1 – 2 tblsp cocoa
- 110 g butter
Decoration
- Liquorice Catherine wheels
- Liquorice allsorts
- Maltesers
- Various sweets
To Make Cakes
- Cream butter and sugar together
- Crack eggs into bowl
- Add eggs and flour to creamed butter and sugar and mix well
- Add baking powder and vanilla
- Put into cake cups
- Bake gas 4 (electric 180C, fan 160C) for approx 15 mins until risen and brown
To Make Icing
- Cream icing sugar with butter
- Add cocoa
- Add milk to soften
- Ice cakes when cool and decorate as spooky spiders and faces
Notes
- Hooting owl faces look good using maltesers for eyes and a slice off the top of the cakes

Potato & Pumpkin Rostis

Crunchy Autumn Rosti

Ingredients
- 800 g potatoes
- 400 g carrots
- 400 g pumpkin
- 100 g softened butter
Instructions
- Parboil the potatoes with skin in salted water until just tender, but not soft.
- Allow to cool
- Coarsely grate the potatoes
- Peel and grate the carrots and pumpkin
- Mix the grated potato, carrot and pumpkin
- Add softened butter and season with salt and pepper
- Form into flat cakes and place on lined baking trays
- Bake in oven until browned
Notes
- Rostis can also be fried in olive oil instead of baking

Tomato Ketchup

Smooth & rich tomato sauce

Ingredients
- 3 red onions
- 2 bulb fennel
- 4 sticks celery
- 2 cloves garlic, peeled and sliced
- 1/2 a fresh red chili, deseeded and finely chopped
- 1 tblsp coriander seeds
- 1/2 tsp salt
- 1 tsp freshly ground black pepper
- 1 kg tomatoes,
- 1 400 g tin tomatoes
- 1 tblsp tomato puree
- 200 ml red wine vinegar
- 100 g soft brown sugar
- 2 tblsp olive oil
Instructions
- Chop onion, celery and fennel finely
- Crush garlic
- Crush coriander seeds
- Chop tomatoes into chunks
- Place onion, celery, garlic and fennel in a saucepan with olive oil
- Cook gently over a low heat for 10 to 15 minutes until softened, stirring every so often.
- Add the chopped tomatoes, tin of tomatoes and coriander
- Bring to the boil and simmer gently until the sauce reduces by half
- Whiz the sauce in a food processor or with a hand blender and push it through a sieve to make it smooth
- Put the sauce into a clean pan and add the vinegar and the sugar
- Place the sauce on the heat and simmer until it reduces and thickens to the consistency of tomato ketchup.
- Season with the pepper and salt
Notes
- Delicious hot or cold. Leave out the chilli if you wish or add more!

Apple Tart

Traditional British Pudding

Pastry
- 250 g plain flour
- 125 g butter
- 1 tblsp sugar
- 1 egg
- cold water to bind
- Filling
- 1 kg cooking apples
- 2 tsp cinnamon
- 3 tblsp brown sugar
- 2 lemons
Instructions
- Rub butter into flour until mixture resembles breadcrumbs and add sugar
- Beat egg and stir into flour then add enough cold water until mixture binds together
- Roll out half of the pastry to line pie dish
- Peel and core apple and chop into small pieces
- Add cinnamon, brown sugar and lemon juice to apple
- Fill pie with chopped apple
- Roll out remaining pastry and place on top of apple
- Seal edges and brush with beaten egg and bake in oven until browned
Notes
- Try different fruit fillings e.g apple and blackberry, plum, blackcurrant, pear, apricot

Ingredients
- Partridge Breast
- 150 g plain flour
- 2 eggs
- 300 g breadcrumbs
Instructions
- Cut partridge breast into strips
- Put flour on a plate
- Beat eggs and put on another plate
- Season breadcrumbs with salt and pepper and put in a bowl
- Dip partridge strips first in flour, then egg and finally in breadcrumbs.
- Heat oil in pan and fry goujons until browned.
Notes
- Also good with pheasant, turkey and chicken

Flat Seeded Bread

Easy tasty bread, great for parties and picnics

Ingredients
- 500 g strong plain flour
- 25 g yeast
- 1/2 tsp salt
- 280 ml water
- 1 tbsp olive oil
- 1 egg white beaten
- sesame seeds
- poppy seeds
- fennel seeds
Instructions
- Combine flour, yeast, salt and water to from a dough
- Knead for 5 minutes until smooth and elastic
- Leave to rest for 10 minutes
- Divide into balls and roll out into flat rounds
- Brush bread with egg white and scatter with seeds of your choice
- Bake in oven for about 15 mins until they puff and brown
Notes
- Can be re- heated in oven if you wish to serve warm. If making into shaped rolls rather than flat rounds leave to rise for approx 20 mins before baking
