Cake Mix
  1. 200 g butter
  2. 200 g caster sugar
  3. 200 g SR flour
  4. 4 eggs
  5. ½ tsp baking powder
  6. 1 tsp vanilla
Butter Icing
  1. 110g icing sugar
  2. 1 – 2 tblsp cocoa
  3. 110 g butter
Decoration
  1. Liquorice Catherine wheels
  2. Liquorice allsorts
  3. Maltesers
  4. Various sweets
To Make Cakes
  1. Cream butter and sugar together
  2. Crack eggs into bowl
  3. Add eggs and flour to creamed butter and sugar and mix well
  4. Add baking powder and vanilla
  5. Put into cake cups
  6. Bake gas 4 (electric 180C, fan 160C) for approx 15 mins until risen and brown
To Make Icing
  1. Cream icing sugar with butter
  2. Add cocoa
  3. Add milk to soften
  4. Ice cakes when cool and decorate as spooky spiders and faces
Notes
  1. Hooting owl faces look good using maltesers for eyes and a slice off the top of the cakes

Ingredients
  1. 800 g potatoes
  2. 400 g carrots
  3. 400 g pumpkin
  4. 100 g softened butter
Instructions
  1. Parboil the potatoes with skin in salted water until just tender, but not soft.
  2. Allow to cool
  3. Coarsely grate the potatoes
  4. Peel and grate the carrots and pumpkin
  5. Mix the grated potato, carrot and pumpkin
  6. Add softened butter and season with salt and pepper
  7. Form into flat cakes and place on lined baking trays
  8. Bake in oven until browned
Notes
  1. Rostis can also be fried in olive oil instead of baking

Ingredients
  1. 3 red onions
  2. 2 bulb fennel
  3. 4 sticks celery
  4. 2 cloves garlic, peeled and sliced
  5. 1/2 a fresh red chili, deseeded and finely chopped
  6. 1 tblsp coriander seeds
  7. 1/2 tsp salt
  8. 1 tsp freshly ground black pepper
  9. 1 kg tomatoes,
  10. 1 400 g tin tomatoes
  11. 1 tblsp tomato puree
  12. 200 ml red wine vinegar
  13. 100 g soft brown sugar
  14. 2 tblsp olive oil
Instructions
  1. Chop onion, celery and fennel finely
  2. Crush garlic
  3. Crush coriander seeds
  4. Chop tomatoes into chunks
  5. Place onion, celery, garlic and fennel in a saucepan with olive oil
  6. Cook gently over a low heat for 10 to 15 minutes until softened, stirring every so often.
  7. Add the chopped tomatoes, tin of tomatoes and coriander
  8. Bring to the boil and simmer gently until the sauce reduces by half
  9. Whiz the sauce in a food processor or with a hand blender and push it through a sieve to make it smooth
  10. Put the sauce into a clean pan and add the vinegar and the sugar
  11. Place the sauce on the heat and simmer until it reduces and thickens to the consistency of tomato ketchup.
  12. Season with the pepper and salt
Notes
  1. Delicious hot or cold. Leave out the chilli if you wish or add more!

Pastry
  1. 250 g plain flour
  2. 125 g butter
  3. 1 tblsp sugar
  4. 1 egg
  5. cold water to bind
  6. Filling
  7. 1 kg cooking apples
  8. 2 tsp cinnamon
  9. 3 tblsp brown sugar
  10. 2 lemons
Instructions
  1. Rub butter into flour until mixture resembles breadcrumbs and add sugar
  2. Beat egg and stir into flour then add enough cold water until mixture binds together
  3. Roll out half of the pastry to line pie dish
  4. Peel and core apple and chop into small pieces
  5. Add cinnamon, brown sugar and lemon juice to apple
  6. Fill pie with chopped apple
  7. Roll out remaining pastry and place on top of apple
  8. Seal edges and brush with beaten egg and bake in oven until browned

  1. Try different fruit fillings e.g apple and blackberry, plum, blackcurrant, pear, apricot

Ingredients
  1. Partridge Breast
  2. 150 g plain flour
  3. 2 eggs
  4. 300 g breadcrumbs
Instructions
  1. Cut partridge breast into strips
  2. Put flour on a plate
  3. Beat eggs and put on another plate
  4. Season breadcrumbs with salt and pepper and put in a bowl
  5. Dip partridge strips first in flour, then egg and finally in breadcrumbs.
  6. Heat oil in pan and fry goujons until browned.

  1. Also good with pheasant, turkey and chicken

Ingredients
  1. 500 g strong plain flour
  2. 25 g yeast
  3. 1/2 tsp salt
  4. 280 ml water
  5. 1 tbsp olive oil
  6. 1 egg white beaten
  7. sesame seeds
  8. poppy seeds
  9. fennel seeds
Instructions
  1. Combine flour, yeast, salt and water to from a dough
  2. Knead for 5 minutes until smooth and elastic
  3. Leave to rest for 10 minutes
  4. Divide into balls and roll out into flat rounds
  5. Brush bread with egg white and scatter with seeds of your choice
  6. Bake in oven for about 15 mins until they puff and brown
Notes
  1. Can be re- heated in oven if you wish to serve warm. If making into shaped rolls rather than flat rounds leave to rise for approx 20 mins before baking
