PASTRY
  1. 500 g plain flour
  2. 375 g butter
  3. little water
Filling
  1. 500 g sausage meat (we minced our own)
  2. 100 g breadcrumbs
  3. 1 tblsp chopped sage
  4. 1 tblsp chopped thyme
  5. 1 egg
  6. 1 red onion
  7. 1/2 tsp ground allspice
  8. 1/4 tsp salt
  9. 1/4 tsp black pepper
Egg wash
  1. 1 egg
  2. 2 tblsp milk
Instructions
  1. Chop sage and thyme
  2. Grate onion or chop very finely
  3. Mix all filling ingredients
  4. Fry a little of the filling and eat to check for seasoning
  5. Add more salt and pepper if needed
  6. Beat egg with milk to make egg wash
  7. Rub butter into flour until it looks like breadcrumbs
  8. Add water little at a time while stirring until pastry mix sticks together
  9. Divide pastry into 6 pieces and roll out into 12cm wide long strips
  10. Form long ‘sausage’ with filling and place in centre of pastry strips
  11. Fold pastry over filling, sealing with egg wash and forming into rolls
  12. Cut into 4 cm pieces, brush with egg wash and place on greased baking tray
  13. Bake for about 40 mins gas 4 (180C, fan 160C)
Notes
  1. Sausage rolls can be frozen before baking

Iced Christmas Buns

Dough
  1. 450 g strong flour
  2. 25 g fresh yeast
  3. 1 tsp caster sugar
  4. 1 tsp salt
  5. 1 egg
  6. 50 g butter
  7. 250 ml milk
Filling
  1. 150 g mixed dried fruit
  2. 25 g mixed peel
  3. 50 g soft brown sugar
  4. 1 tsp mixed spice
  5. 1 tsp ground nutmeg
  6. zest of 1 lemon
  7. 20 g melted butter
Icing
  1. 200 g icing sugar
  2. Warm water
  3. Cherries to decorate
Instructions
  1. Heat milk to just warm and blend with yeast
  2. Beat egg
  3. Put flour, salt and sugar in a large bowl and rub in the butter
  4. Add yeast mix and beaten egg to dry ingredients and stir to form a firm dough
  5. Turn out onto a board and knead until smooth
  6. Leave in covered bowl to rest in a warm place for approx 10 mins
  7. Mix all filling ingredients together
  8. Roll out dough into a rectangle about 1 cm thick
  9. Brush with melted butter and cover with filling
  10. Roll and cut into rounds
  11. Placed rounds on greased baking tray and leave to rise
  12. When risen bake in oven gas 4 (180C, fan 160C) until golden brown
  13. Add enough water to icing sugar to form a thick paste that will drop from a spoon
  14. When buns are cool decorate with icing
  15. Place a cherry on the top of each bun
Notes
  1. Put together your own mixture of dried fruit e.g cranberries, currants, pineapple, raisins, apricots etc

Cake
  1. 55 g cocoa powder
  2. 140 g caster sugar
  3. 6 eggs
Filling
  1. 200 g plain chocolate
  2. 2 eggs
  3. 300 ml double cream
Instructions
  1. To make cake separate eggs and beat yolks with sugar until light and fluffy
  2. Add cocoa to egg yolk mix
  3. Beat egg whites until stiff and fold into mixture
  4. Spread into lined tin
  5. Bake for about 25 mins gas 4 (180C fan 160C) until risen
  6. Leave to cool
  7. Melt chocolate in bowl over pan of hot water (or in microwave)
  8. Separate eggs and beat egg yolks into chocolate
  9. Whisk egg whites until stiff and fold into chocolate mixture while it is still warm
  10. Whip cream to a soft spreading consistency
  11. Turn cake onto greaseproof paper dusted with icing sugar
  12. Spread chocolate filling over cake and whipped cream over the chocolate filling
  13. Roll and dust with icing sugar
Notes
  1. Turn cake out onto greaseproof paper while still warm and roll. Then unroll when cool and ready to add filling. By doing this the cake will crack less during its final roll.

Mini Scotch Eggs

Ingredients
  1. 6 eggs
  2. 200g breadcrumbs
  3. 400g pork mince
  4. 3 tbsp chopped mixed herbs (sage, parsley and thyme)
  5. 1/2 tsp ground allspice
  6. 1/2 tsp ground black pepper
  7. 1/2 tsp salt
  8. 1 tsp mustard powder
  9. 50g flour
  10. 2eggs
  11. 200g breadcrumbs
  12. Vegetable oil, to cook
Instructions
  1. Hard boil eggs, allow to cool and remove shells
  2. Mix pork mince with breadcrumbs, herbs, mustard and spices
  3. Cover eggs completely with pork mixture forming into a ball
  4. Beat the two raw eggs together in a bowl with a splash of milk
  5. Put the flour in a second bowl and season, then tip the breadcrumbs into a third bowl
  6. Arrange in an assembly line
  7. Dip covered eggs into flour then beaten egg then breadcrumbs
  8. Deep fry in oil until golden brown and crisp on the outside and cooked on the inside (about 10 mins)
Notes
  1. We used quail eggs to make mini scotch eggs.
  2. When cooking make sure the oil is not too hot as the eggs will cook on the outside before the pork has completely cooked. You can start them off in the oil until the outside is crisp then finish cooking them in the oven
