Ingredients
- 550 g plain flour
- 1/2 tsp salt
- 20 g fresh yeast
- 110 g caster sugar
- 50 g butter
- 4 egg yolks
- 300 ml pint milk
Topping
- 2 oz caster sugar
- 1 tsp cinnamon
Instructions
- Warm the milk and stir in fresh yeast , sugar and leave until bubbly
- Rub the butter into the flour
- Beat egg yolks and add to yeast mix
- Stir in flour, salt and mix to a soft dough
- Knead until smooth and elastic
- Place in a bowl, cover with clingfilm and leave to rise in a warm place
- Knock back risen dough and divide into balls
- Make a hole through the centre of each ball with your finger then stretch into circles and put on a greased baking tray to rise
- When risen deep fry for about 2 mins on each side until golden
- Mix sugar and cinnamon and sprinkle over doughnuts
Notes
- Try filling doughnut balls with a tsp of jam. Flatten rounds of dough and place approx 1 tsp of jam in the centre. Pull together the edges of the dough over the jam and squeeze to seal. Leave to rise before frying

Crumpets

Ingredients
- 350 g strong flour
- 15 g fresh yeast
- 350 ml warm water
- 1/2 tsp bicarbonate soda
- 1 tsp salt
- 150 ml warm milk
Instructions
- Mix flour, yeast and warm water in a large mixing bowl
- Add the bicarbonate soda and salt to the warm milk and stir into the batter
- Cover and leave in a warm place until frothy
- Heat and grease a griddle or heavy frying pan
- Place pastry cutters or crumpet rings on the griddle
- Pour about 2 tblsp mixture into each ring
- Cook gently for about 10 mins until crumpets are set and bubbles have burst
- Remove rings and turn over crumpets cooking for a further 2-3 mins until pale brown
Notes
- If you have no crumpet rings just spoon mixture onto griddle/frying pan to make flatter crumpets

Red Pepper Pesto

- 300 g red pepper
- 100 ml olive oil
- 30 g fresh basil
- 60 g parmesan
- 2 gloves garlic
- 30 g walnuts
- 20 g pine nuts
Instructions
- Crush garlic
- Grate cheese
- Mix all ingredients in food processor until smooth
- Season with salt and pepper
Notes
- If you do not have a food processor use a pestle & mortar
- For a truly green pesto add more basil instead of the red pepper
- Add more olive oil if needs to bind the ingredients

Fresh Vegetable Salsa

Crunchy refreshing summer salsa

Ingredients
- 200 g cabbage
- 100 g broad beans
- 100 g cucumber
- 200 g carrot
- 100 g fennel
- 1 pomegranate
- 2 limes
- Fresh mint
- 150 ml rice vinegar
- 25 g sugar
- 1 tsp salt
- 25 ml fish sauce
Instructions
- Grate or slice cabbage, carrot and fennel
- Boil broad beans in water until just tender
- Cut cucumber into chunks
- Remove seeds from pomegranate
- Mix vinegar, sugar, salt, fish sauce and lime juice
- Chop mint and add to vegetables and pomegranate seeds
Notes
- Try different vegetables in season e.g radishes, green beans, peas

Tortilla

Ingredients
- 200g plain flour
- 200 g whole wheat flour
- 25 g butter
- 1 teaspoons baking powder
- pinch salt
- 175 ml boiling water
Instructions
- Mix together the flour, baking powder and salt in large bowl
- Rub in butter to resemble breadcrumbs
- Add water slowly, mixing to make a soft dough. You may not need all the water.
- Knead a few minutes on floured surface until smooth and elastic
- Put back in bowl and let rest, covered for 10 minutes
- Divide into small balls the size of golf balls and roll out into size and thickness you prefer
- Cook in dry heavy frying pan until top is slightly bubbly then turning on opposite side for a minute or two
Notes
- The thinner you roll out the tortillas the crispier they will be when cooked

Lavender & Yoghurt Ice Cream

Soft ice cream yummy with everything!

Ingredients
- 350 g natural yoghurt
- 200 ml double cream
- 75 g caster sugar
- 1 tsp vanilla extract
- 1 tsp chopped lavender flowers
Instructions
- Beat all ice cream ingredients together until smooth
- Put into ice cream maker and freeze churn
Notes
- If you do not have an ice cream maker put mix into freezer and every 30 mins remove and stir or whisk to break up ice crystals. Repeat 3 or 4 times until ice cream is smooth.
- Try adding 4 tblsp of crushed berries (e.g strawberries, raspberries, blueberries) instead of lavender for a lovely rosy pink ice cream

Tomato Relish

Ingredients
- 2 onions
- 4 cloves garlic
- 1.5 kg tomatoes
- 350 ml red wine vinegar
- 400 g granulated sugar
- chilli to taste
- black pepper & salt to season
Instructions
- Chop tomatoes into chunks and add to onion
- Add vinegar and sugar and simmer for about 1 hour
- Season with salt and pepper
- The relish should be the consistency of jam
- Eat straight away or put into jam jar and store in cool place
Notes
- Serve with any meat or cheese.
- We ate with smoked partridge and tortillas

Lemon Curd

Ingredients
- 4 lemons
- 170 g butter
- 450 g granulated sugar
- 6 eggs
Instructions
- Grate the zest of lemons and juice
- Put lemon juice, zest, butter, sugar and eggs into a heavy saucepan and heat gently stirring all the time until the mixture is thick
- Pass through a sieve to give a smooth mixture
- Leave to cool
Notes
- Vary flavour by using 3 lemons and 2 limes
- Good with pancakes
- Great for lemon curd tarts or stirred into whipped cream and served with meringues

Ingredients
- 225 g plain flour
- 2 eggs
- 400 ml milk
- 100 ml water
- ΒΌ tsp salt
Instructions
- Beat flour, eggs, milk, salt and water to a smooth batter
- Leave to stand for 30 minutes
- Heat frying pan and add a small lump of butter
- When butter is bubbling pour in a little batter and spread by tipping frying pan
- After a couple of mins flip over to cook on other side
- Cook another one
Notes
- Great with sweet or savoury fillings. We ate ours with lemon curd and Lavender Ice cream.
