Ingredients
  1. 550 g plain flour
  2. 1/2 tsp salt
  3. 20 g fresh yeast
  4. 110 g caster sugar
  5. 50 g butter
  6. 4 egg yolks
  7. 300 ml pint milk
Topping
  1. 2 oz caster sugar
  2. 1 tsp cinnamon
Instructions
  1. Warm the milk and stir in fresh yeast , sugar and leave until bubbly
  2. Rub the butter into the flour
  3. Beat egg yolks and add to yeast mix
  4. Stir in flour, salt and mix to a soft dough
  5. Knead until smooth and elastic
  6. Place in a bowl, cover with clingfilm and leave to rise in a warm place
  7. Knock back risen dough and divide into balls
  8. Make a hole through the centre of each ball with your finger then stretch into circles and put on a greased baking tray to rise
  9. When risen deep fry for about 2 mins on each side until golden
  10. Mix sugar and cinnamon and sprinkle over doughnuts
Notes
  1. Try filling doughnut balls with a tsp of jam. Flatten rounds of dough and place approx 1 tsp of jam in the centre. Pull together the edges of the dough over the jam and squeeze to seal. Leave to rise before frying

Ingredients
  1. 350 g strong flour
  2. 15 g fresh yeast
  3. 350 ml warm water
  4. 1/2 tsp bicarbonate soda
  5. 1 tsp salt
  6. 150 ml warm milk
Instructions
  1. Mix flour, yeast and warm water in a large mixing bowl
  2. Add the bicarbonate soda and salt to the warm milk and stir into the batter
  3. Cover and leave in a warm place until frothy
  4. Heat and grease a griddle or heavy frying pan
  5. Place pastry cutters or crumpet rings on the griddle
  6. Pour about 2 tblsp mixture into each ring
  7. Cook gently for about 10 mins until crumpets are set and bubbles have burst
  8. Remove rings and turn over crumpets cooking for a further 2-3 mins until pale brown
Notes
  1. If you have no crumpet rings just spoon mixture onto griddle/frying pan to make flatter crumpets

  1. 300 g red pepper
  2. 100 ml olive oil
  3. 30 g fresh basil
  4. 60 g parmesan
  5. 2 gloves garlic
  6. 30 g walnuts
  7. 20 g pine nuts
Instructions
  1. Crush garlic
  2. Grate cheese
  3. Mix all ingredients in food processor until smooth
  4. Season with salt and pepper
Notes
  1. If you do not have a food processor use a pestle & mortar
  2. For a truly green pesto add more basil instead of the red pepper
  3. Add more olive oil if needs to bind the ingredients

Ingredients
  1. 200 g cabbage
  2. 100 g broad beans
  3. 100 g cucumber
  4. 200 g carrot
  5. 100 g fennel
  6. 1 pomegranate
  7. 2 limes
  8. Fresh mint
  9. 150 ml rice vinegar
  10. 25 g sugar
  11. 1 tsp salt
  12. 25 ml fish sauce
Instructions
  1. Grate or slice cabbage, carrot and fennel
  2. Boil broad beans in water until just tender
  3. Cut cucumber into chunks
  4. Remove seeds from pomegranate
  5. Mix vinegar, sugar, salt, fish sauce and lime juice
  6. Chop mint and add to vegetables and pomegranate seeds

  1. Try different vegetables in season e.g radishes, green beans, peas

Ingredients
  1. 200g plain flour
  2. 200 g whole wheat flour
  3. 25 g butter
  4. 1 teaspoons baking powder
  5. pinch salt
  6. 175 ml boiling water
Instructions
  1. Mix together the flour, baking powder and salt in large bowl
  2. Rub in butter to resemble breadcrumbs
  3. Add water slowly, mixing to make a soft dough. You may not need all the water.
  4. Knead a few minutes on floured surface until smooth and elastic
  5. Put back in bowl and let rest, covered for 10 minutes
  6. Divide into small balls the size of golf balls and roll out into size and thickness you prefer
  7. Cook in dry heavy frying pan until top is slightly bubbly then turning on opposite side for a minute or two

  1. The thinner you roll out the tortillas the crispier they will be when cooked

Lavender & Yoghurt Ice Cream

Ingredients
  1. 350 g natural yoghurt
  2. 200 ml double cream
  3. 75 g caster sugar
  4. 1 tsp vanilla extract
  5. 1 tsp chopped lavender flowers
Instructions
  1. Beat all ice cream ingredients together until smooth
  2. Put into ice cream maker and freeze churn
Notes
  1. If you do not have an ice cream maker put mix into freezer and every 30 mins remove and stir or whisk to break up ice crystals. Repeat 3 or 4 times until ice cream is smooth.
  2. Try adding 4 tblsp of crushed berries (e.g strawberries, raspberries, blueberries) instead of lavender for a lovely rosy pink ice cream

Ingredients
  1. 2 onions
  2. 4 cloves garlic
  3. 1.5 kg tomatoes
  4. 350 ml red wine vinegar
  5. 400 g granulated sugar
  6. chilli to taste
  7. black pepper & salt to season
Instructions
  1. Chop tomatoes into chunks and add to onion
  2. Add vinegar and sugar and simmer for about 1 hour
  3. Season with salt and pepper
  4. The relish should be the consistency of jam
  5. Eat straight away or put into jam jar and store in cool place
Notes
  1. Serve with any meat or cheese.
  2. We ate with smoked partridge and tortillas

Ingredients
  1. 4 lemons
  2. 170 g butter
  3. 450 g granulated sugar
  4. 6 eggs
Instructions
  1. Grate the zest of lemons and juice
  2. Put lemon juice, zest, butter, sugar and eggs into a heavy saucepan and heat gently stirring all the time until the mixture is thick
  3. Pass through a sieve to give a smooth mixture
  4. Leave to cool
Notes
  1. Vary flavour by using 3 lemons and 2 limes
  2. Good with pancakes
  3. Great for lemon curd tarts or stirred into whipped cream and served with meringues

Ingredients
  1. 225 g plain flour
  2. 2 eggs
  3. 400 ml milk
  4. 100 ml water
  5. ΒΌ tsp salt
Instructions
  1. Beat flour, eggs, milk, salt and water to a smooth batter
  2. Leave to stand for 30 minutes
  3. Heat frying pan and add a small lump of butter
  4. When butter is bubbling pour in a little batter and spread by tipping frying pan
  5. After a couple of mins flip over to cook on other side
  6. Cook another one

  1. Great with sweet or savoury fillings. We ate ours with lemon curd and Lavender Ice cream.
