Ingredients
  1. 250 g gooseberries
  2. Sugar to sweeten
Custard
  1. 300 ml milk
  2. 3 egg yolks
  3. 1 tblsp corn flour
  4. Sugar to sweeten
  5. 300 ml double cream
  6. strawberries to garnish
Instructions
  1. Simmer gooseberries in a little water until soft
  2. Cool gooseberries and push through sieve to remove pips
  3. Mix egg yolks and corn flour to a smooth paste
  4. Heat milk and when just boiling add to egg mix and stir until thickened
  5. Add custard to sieved gooseberries and stir in sugar to sweeten
  6. Beat cream until thick
  7. Add cream to cooled gooseberry and custard mix
  8. Stir until thoroughly mixed
  9. Put into dish and refrigerate
  10. Garnish with strawberries

  1. Cook gooseberries with elderflower cordial to make gooseberry & elderflower fool

  1. 2 avocados
  2. 2 large tomatoes
  3. 1/2 red onion
  4. juice of 1 lime
  5. 1 tblsp chopped coriander
  6. chilli to taste
  7. pinch of salt
Instructions
  1. Mash avocado
  2. Chop onion, chilli, tomatoes and coriander finely
  3. Mix with lime juice and mashed avocado
  4. Add salt to season
Notes
  1. Eat straight away as avocados will lose their lovely green colour

Ingredients
  1. 500 g strong plain flour
  2. 25 g yeast
  3. 5 g salt
  4. 280 ml water
  5. 1 tbsp olive oil
  6. 1 egg white beaten
  7. sesame seeds
Instructions
  1. Combine flour, yeast, salt and water to form a dough
  2. Knead for 5 minutes
  3. Leave to rest for 10 minutes
  4. Divide into balls and roll out into long sticks
  5. Brush bread with egg white and scatter with sesame seeds
  6. Bake in oven gas 5 (200C, fan 180C) for about 15 mins until they brown

Ingredients
  1. 2 free-range egg yolks
  2. 1 heaped teaspoon Dijon mustard
  3. 500 ml mixed oils
  4. 1-2 tablespoons white wine vinegar
  5. ½ lemon
  6. salt
Instructions
  1. Whisk the egg yolks in a bowl, then add the mustard and whisk together.
  2. Gradually add about half the oil, very slowly at first, whisking continuously for around 3 to 5 minutes, or until thickened.
  3. Once you've added about half the oil, whisk in 1 tablespoon of vinegar – this will loosen the mixture slightly and give it a paler colour.
  4. Continue to gradually add the remaining oil, whisking continuously.
  5. Season with a pinch of salt, a squeeze of lemon juice and a little more vinegar, if needed.
  6. Store in a sterilised jar in the fridge for up to one week.
Notes
  1. Add the oil very slowly (a dribble at a time) as you beat the mix or the mayonnaise will not thicken

Ingredients
  1. 500 g new potatoes
  2. 1 cucumber
  3. 2 apples
  4. 1 tblsp chopped tarragon or chives
Instructions
  1. Simmer potatoes in water until just tender
  2. Allow to cool and chop into chunks
  3. Chop cucumber and apple into same size chunks
  4. Finely chop herbs
  5. Stir mayonnaise into potato salad

Ingredients
  1. 200g softened butter
  2. 100g icing sugar
  3. 200g plain flour
  4. half a tsp of baking powder
  5. 2 tsp elderflower cordial
  6. 100g ground almonds
  7. caster sugar, for sprinkling.
Instructions
  1. In a bowl, cream the butter with the sifted icing sugar until light and fluffy.
  2. Sift in the plain flour and baking powder, along with the elderflower cordial and  ground almonds.
  3. Mix them all in, only stirring as much as is necessary. Too much stirring will result in hard, tough biscuits.
  4. Once they are all combined, lay a large piece of cling film onto the work surface and tip the dough into the middle. Quickly form the dough into a sausage shape and roll it up in the cling film, twisting the ends tightly
  5. Place in the refrigerator for a half an hour until firm, then pre-heat the oven to 180deg C (Gas Mark 4).
  6. Remove the cling film and slice into rounds of about a half centimetre thickness.
  7. Place the rounds onto a baking tray lined with parchment paper.  Sprinkle with a little caster sugar and bake in the oven for 10 - 15 minutes until light golden brown.
  8. Remove from the oven and give them a second or two to firm up, then carefully transfer to a wire rack to cool.

Elderflower Cordial
The best elderflower cordial

Ingredients
  1. 15 heads elderflower
  2. 1 kg sugar
  3. 2 lemons
  4. 40 g citric acid
  5. 750 ml boiling water
Instructions
  1. Pick elderflower heads and remove any leaves
  2. Chop lemons into quarters
  3. Put sugar, lemons, and citric acid in large bowl/plastic container
  4. Heat water to boiling and pour over ingredients in bowl
  5. Add elderflower heads
  6. Leave in cool place for 2 days
  7. Stir 3 times a day
  8. Strain
  9. Dilute with water before drinking

  1. Will keep for a few weeks in the fridge or months in the freezer

Ingredients
  1. prepared rabbit
  2. 1 carrot
  3. 1 onion
  4. 4 sprigs rosemary
  5. handful fresh thyme
  6. 4 bay leaves
  7. breadcrumbs
  8. beaten egg
  9. flour
  10. salt
  11. pepper
  12. oil for frying
Instructions
  1. Prepare rabbit into bite size chunks
  2. Chop carrot and onion and put in pan of water
  3. Add rosemary, bay leaves and thyme
  4. Bring to the boil and add rabbit pieces
  5. Simmer for approx 40 mins until rabbit is tender
  6. Remove rabbit and cool
  7. Prepare 3 plates, one with flour seasoned with salt and pepper, one with breadcrumbs and one with beaten egg
  8. First dip rabbit into flour, then egg, then breadcrumbs
  9. Deep fry rabbit pieces until golden brown

  1. Delicious dipped in homemade mayonnaise
