Creamy Gooseberry Desert

Ingredients
- 250 g gooseberries
- Sugar to sweeten
Custard
- 300 ml milk
- 3 egg yolks
- 1 tblsp corn flour
- Sugar to sweeten
- 300 ml double cream
- strawberries to garnish
Instructions
- Simmer gooseberries in a little water until soft
- Cool gooseberries and push through sieve to remove pips
- Mix egg yolks and corn flour to a smooth paste
- Heat milk and when just boiling add to egg mix and stir until thickened
- Add custard to sieved gooseberries and stir in sugar to sweeten
- Beat cream until thick
- Add cream to cooled gooseberry and custard mix
- Stir until thoroughly mixed
- Put into dish and refrigerate
- Garnish with strawberries

- Cook gooseberries with elderflower cordial to make gooseberry & elderflower fool

Favourite dip for breadsticks

- 2 avocados
- 2 large tomatoes
- 1/2 red onion
- juice of 1 lime
- 1 tblsp chopped coriander
- chilli to taste
- pinch of salt
Instructions
- Mash avocado
- Chop onion, chilli, tomatoes and coriander finely
- Mix with lime juice and mashed avocado
- Add salt to season
Notes
- Eat straight away as avocados will lose their lovely green colour

Breadsticks

Ingredients
- 500 g strong plain flour
- 25 g yeast
- 5 g salt
- 280 ml water
- 1 tbsp olive oil
- 1 egg white beaten
- sesame seeds
Instructions
- Combine flour, yeast, salt and water to form a dough
- Knead for 5 minutes
- Leave to rest for 10 minutes
- Divide into balls and roll out into long sticks
- Brush bread with egg white and scatter with sesame seeds
- Bake in oven gas 5 (200C, fan 180C) for about 15 mins until they brown

- The thinner the breadsticks the crispier they will be

Mayonnaise

Real mayonnaise

Ingredients
- 2 free-range egg yolks
- 1 heaped teaspoon Dijon mustard
- 500 ml mixed oils
- 1-2 tablespoons white wine vinegar
- ½ lemon
- salt
Instructions
- Whisk the egg yolks in a bowl, then add the mustard and whisk together.
- Gradually add about half the oil, very slowly at first, whisking continuously for around 3 to 5 minutes, or until thickened.
- Once you've added about half the oil, whisk in 1 tablespoon of vinegar – this will loosen the mixture slightly and give it a paler colour.
- Continue to gradually add the remaining oil, whisking continuously.
- Season with a pinch of salt, a squeeze of lemon juice and a little more vinegar, if needed.
- Store in a sterilised jar in the fridge for up to one week.
Notes
- Add the oil very slowly (a dribble at a time) as you beat the mix or the mayonnaise will not thicken

- 500 g new potatoes
- 1 cucumber
- 2 apples
- 1 tblsp chopped tarragon or chives
Instructions
- Simmer potatoes in water until just tender
- Allow to cool and chop into chunks
- Chop cucumber and apple into same size chunks
- Finely chop herbs
- Stir mayonnaise into potato salad

- Try a variety of herbs for an exciting flavour

Elderflower & Almond Biscuits

Deliciously crumbly biscuits

Ingredients
- 200g softened butter
- 100g icing sugar
- 200g plain flour
- half a tsp of baking powder
- 2 tsp elderflower cordial
- 100g ground almonds
- caster sugar, for sprinkling.
Instructions
- In a bowl, cream the butter with the sifted icing sugar until light and fluffy.
- Sift in the plain flour and baking powder, along with the elderflower cordial and ground almonds.
- Mix them all in, only stirring as much as is necessary. Too much stirring will result in hard, tough biscuits.
- Once they are all combined, lay a large piece of cling film onto the work surface and tip the dough into the middle. Quickly form the dough into a sausage shape and roll it up in the cling film, twisting the ends tightly
- Place in the refrigerator for a half an hour until firm, then pre-heat the oven to 180deg C (Gas Mark 4).
- Remove the cling film and slice into rounds of about a half centimetre thickness.
- Place the rounds onto a baking tray lined with parchment paper. Sprinkle with a little caster sugar and bake in the oven for 10 - 15 minutes until light golden brown.
- Remove from the oven and give them a second or two to firm up, then carefully transfer to a wire rack to cool.

Elderflower Cordial

The best elderflower cordial

Ingredients
- 15 heads elderflower
- 1 kg sugar
- 2 lemons
- 40 g citric acid
- 750 ml boiling water
Instructions
- Pick elderflower heads and remove any leaves
- Chop lemons into quarters
- Put sugar, lemons, and citric acid in large bowl/plastic container
- Heat water to boiling and pour over ingredients in bowl
- Add elderflower heads
- Leave in cool place for 2 days
- Stir 3 times a day
- Strain
- Dilute with water before drinking

- Will keep for a few weeks in the fridge or months in the freezer

Rabbit Goujons

Ingredients
- prepared rabbit
- 1 carrot
- 1 onion
- 4 sprigs rosemary
- handful fresh thyme
- 4 bay leaves
- breadcrumbs
- beaten egg
- flour
- salt
- pepper
- oil for frying
Instructions
- Prepare rabbit into bite size chunks
- Chop carrot and onion and put in pan of water
- Add rosemary, bay leaves and thyme
- Bring to the boil and add rabbit pieces
- Simmer for approx 40 mins until rabbit is tender
- Remove rabbit and cool
- Prepare 3 plates, one with flour seasoned with salt and pepper, one with breadcrumbs and one with beaten egg
- First dip rabbit into flour, then egg, then breadcrumbs
- Deep fry rabbit pieces until golden brown

- Delicious dipped in homemade mayonnaise
