For the Cakes
  1. 200 g butter
  2. 200 g caster sugar
  3. 200 g SR flour
  4. 4 eggs
  5. 1/2 tsp baking powder
  6. 1 tsp vanilla
For the Ghost Icing
  1. 250 g caster sugar
  2. 120 g golden syrup
  3. 4 egg whites
For the Cakes
  1. Cream butter and sugar together
  2. Crack eggs into bowl
  3. Add eggs, baking powder, vanilla and flour to butter and sugar, mix well
  4. Put into cake cups
  5. Bake gas 4 (electric 180C, fan 160C) for approx 15 mins until risen and brown
For the Ghost Icing
  1. Put caster sugar, golden syrup with 4 tblsp water in pan and heat gently
  2. Stir until sugar has dissolved then bring to the boil and cook for about 5 - 6 mins
  3. If you have a thermometer the temp should reach 115C/240F
  4. While syrup is boiling whisk egg whites to soft peaks
  5. Pour cooked sugar syrup into egg whites with mixer on slow speed
  6. Once all the syrup has been added increase speed and whisk for about 10 mins until icing is thick and glossy
  7. Place icing into piping bag and pipe mounds onto cakes to look like ghosts
Notes
  1. Add eyes to the ghosts using currants or small sweets/chocolate strands

For the Cake
  1. 250 g butter
  2. 250 g caster sugar
  3. 200 g SR flour
  4. 50 g cocoa powder
  5. 4 eggs
  6. 1 tsp vanilla
For the Tombstone Biscuits
  1. 350 g plain flour
  2. 1 tblsp ground ginger
  3. 1 tsp bicarbonate soda
  4. 100 g butter
  5. 175 g soft brown sugar
  6. 4 tblsp golden syrup
  7. 1 egg
For the Icing
  1. 125 g butter
  2. 250 g icing sugar
  3. 2 tblsp cocoa
  4. 1 tblsp milk
For the Cake
  1. Beat together butter and sugar until pale and fluffy
  2. Add eggs, flour, cocoa powder and vanilla and mix well
  3. Spoon mix into lined tin (20cm x 30 cm)
  4. Bake gas 4 (electric 180C/fan 160C) for approx 30 mins until risen and browned
For the Tombstone Biscuits
  1. Put ginger, flour, bicarbonate soda into bowl
  2. Cut butter into small pieces and rub into flour mix until it resembles breadcrumbs
  3. Add sugar, golden syrup and egg and mix together to form a soft dough
  4. Roll out dough and cut into tombstone shapes
  5. Place on greased baking tray and bake in oven gas 4 (180C/fan 160C) for about 10 mins until browned
  6. Cool on wire rack
For the Icing
  1. Beat the butter until creamy
  2. Add icing sugar gradually beating continuously
  3. Add cocoa powder and milk and continue to beat until light and fluffy
  4. Spread icing over cooled cake
Notes
  1. For the earth in the graveyard crush Oreo biscuits into fine crumbs and sprinkle over the icing
  2. Stick tombstone biscuits into iced cake.
  3. For the fencing use chocolate sticks such as matchmakers

Bread with crispy bacon

Ingredients
  1. 125 g wholewheat flour
  2. 375 g white strong plain flour
  3. 25 g fresh yeast
  4. 1 tsp salt
  5. 300 ml water
  6. 1 tblsp olive oil
  7. 6 rashers smoked back bacon
Instructions
  1. Heat water until warm and pour into bowl
  2. Stir in yeast until dissolved
  3. Add flour, oil and salt and mix to form a dough
  4. Turn out onto board and knead for 5 to 10 mins
  5. Put in bowl, cover with clingfilm and leave in warm place to rest until doubled in size
  6. Cut bacon into small pieces and fry in a little oil until crispy
  7. Knock back dough and knead again adding cooked bacon
  8. Knead until bacon is incorporated into dough and then form into desired shapes (rolls or loaf)
  9. Put dough into tin or on baking tray and leave to rise again
  10. Once risen bake in hot oven until browned
Notes
  1. Don't overheat the water as too high a temperature will kill the yeast
  2. Brush the bread with beaten egg half way through the cooking to give a shiny finish
  3. Test to see whether the bread is cooked by knocking the bottom which should sound hollow

For The Batter
  1. 2 egg yolks
  2. 2 cups ice
  3. 250 g plain flour
  4. Flour for dipping
For the Vegetables
  1. Carrots
  2. Beetroot
  3. Onion
  4. Squash
  5. Sweet Potato
For The Batter
  1. Beat egg yolks, pour in ice water, stir lightly and then add flour all at once
  2. Mix lightly with chopsticks, the batter should be lumpy
  3. Use batter immediately
  4. Dip prepared vegetables in flour, then batter then drop in hot oil
For The Vegetables
  1. Peel and cut into chunks or slices

  1. We also used the same batter for pieces of partridge and pheasant breast

Cheese Dipping Sauce

Ingredients
  1. 25 g butter
  2. 25 g plain flour
  3. 600 ml milk
  4. 150 g cheddar cheese
Instructions
  1. Grate the cheese
  2. Melt the butter in a saucepan.
  3. Stir in the flour and cook for 1-2 minutes.
  4. Gradually stir in the milk a little at a time to get a smooth thick sauce
  5. Add the grated cheese and simmer until melted into the sauce and thickened
  6. Season with pepper
  7. Serve as a warm dipping sauce for fresh tortillas, bread sticks or tortilla chips
Notes
  1. Spice it up with some mustard or paprika or chilli sauce. Remove seeds from mini pumpkins and use as serving bowl for dipping sauce.
