Ingredients
  1. 150 g plain flour
  2. 100 g butter
  3. 50 g caster sugar
Instructions
  1. Beat together the lavender and butter to help release the flavour of the lavender
  2. Add the sugar and beat until pale and fluffy
  3. Mix in the flour to form a smooth dough
  4. Form the mixture into cylinder about 4 c.m in diameter
  5. Wrap in cling film and put in fridge for about an hour to cool until firm
  6. Unwrap the dough and with a knife cut into 5mm thick discs and place on a lined baking tray
  7. Bake at Gas 3 (160 C) for about 15 mins until golden brown
  8. Put on a wire rack and allow to cool

  1. Delicious served with Blackberry ice cream (see recipe)

Blackberry Ice Cream

Ingredients
  1. 2 egg whites
  2. pinch salt
  3. 150 g icing sugar
  4. 150 g yoghurt
  5. 250 ml double cream
  6. Juice of 1 lemon
  7. 250 g blackberries
Instructions
  1. Simmer blackberries in pan until just soft (don't add any water)
  2. Press blackberries through a sieve to remove seeds and allow to cool
  3. Beat egg whites with pinch of salt until they form a white foam
  4. Add blackberry juice and icing sugar while continuing to whisk
  5. Stir in yoghurt and lemon juice
  6. Stir in cream
  7. Put mix into ice cream machine and freeze churn
Notes
  1. If making without an ice cream machine put the mix in freezer and after about 45 mins as it starts to freeze stir vigorously with hand or electric whisk to brake up ice crystals. Repeat every 30 mins until completely frozen (2 to 3 hours).

Ingredients
  1. 250 g SR flour
  2. 25 g oats
  3. 250 g soft brown sugar
  4. 200 g butter
  5. 75 g desiccated coconut
  6. 2 eggs
  7. 350 g blackberries
Instructions
  1. Put flour oats and coconut into a bowl
  2. Cut butter into small pieces and rub into flour mix until it resembles breadcrumbs
  3. Stir in sugar
  4. Put a cup of the mixture aside for the topping
  5. Stir eggs into the mixture
  6. Spread mixture over the bottom of a lined baking tin (approx 30 c.m x 20 c.m)
  7. Scatter blackberries over the top and then the saved cup of crumble mix
  8. Bake in oven gas 4 (180C, fan 160C) for about 1 hour until risen and golden
Notes
  1. After 1 hour Check that it is cooked completely by poking with a skewer that should come out clean. If not cooked in the middle put back in the oven for an extra 15 mins

Blackberry Mousse

Ingredients
  1. 4 sheets gelatine (2 tsp powdered gelatine)
  2. 4 eggs
  3. 1 lemon
  4. 300 ml double cream
  5. 75 g caster sugar
  6. 250 g blackberries
Instructions
  1. Simmer blackberries in pan without water until softened and then press through a sieve to remove seeds
  2. Soften gelatine in a little water and then add lemon juice and heat in microwave until gelatine has completely dissolved
  3. Add gelatine to blackberry puree
  4. Separate eggs and put egg yolks in a bowl with sugar
  5. Heat yolks and sugar over a pan of simmering water, whisking continuously until mixture becomes paler in cooler and thickens
  6. Allow to cool a little before adding to blackberry and gelatine mix
  7. Beat cream until thick and stir into blackberry mix
  8. Finally beat egg whites to soft peaks and add to mix
  9. Spoon mousse into individual or one dish and put into the fridge for approx 45 mins to set

  1. Decorate with fresh blackberries

Ingredients
  1. 110 g ground almonds
  2. 170 g caster sugar
  3. 1 tsp plain flour
  4. 2 egg whites
  5. 2 drops vanilla essence
  6. rice paper for baking
Instructions
  1. Beat egg whites until light and fluffy
  2. Add sugar gradually while continuing to beat
  3. Stir in ground almonds, flour and vanilla essence
  4. Pipe onto rice paper
  5. Bake for 20 mins
  6. Sandwich together with cream or jam

  1. Try making different coloured Macaroons by adding some natural colouring

Ingredients
  1. 80 g oats
  2. 80 g coconut
  3. 140 g plain flour
  4. 1 level tsp bicarb
  5. 140 g caster sugar
  6. 140 g butter
  7. 2 tblsp golden syrup
Instructions
  1. Melt butter and golden syrup in pan
  2. Add remaining ingredients
  3. Make mixture into balls and place on baking tray
  4. Bake in oven gas 3 (160C, fan 140C) until browned

  1. The biscuits should be golden brown and will go crisp once they have cooled

  1. 300 g raspberries
  2. 5 sheets gelatine (2 1/2 tsp powdered gelatine)
  3. Juice of 1 lemon
  4. 2 - 3 tblsp sugar to taste
Instructions
  1. Simmer raspberries in pan without water until softened and then press through a sieve to remove seeds
  2. Soften gelatine in a little water and then add lemon juice and heat in microwave until gelatine has completely dissolved
  3. Add raspberry puree to lemon juice to make about 400 ml of liquid
  4. Sweeten to taste with sugar
  5. Pour into moulds and leave to set in fridge
Notes
  1. This Jelly is also good make with blackberries instead of raspberries
  2. Try putting some whole fruit in the jelly before leaving to set
