Red Onion & Parmesan Focaccia

Ingredients
- 500 g strong white flour
- 15 g fresh yeast
- 2 tblsp olive oil
- 350 ml warm water
- 1/2 tsp salt
- Topping
- 2 red onion
- 3 tbsp olive oil
- Parmesan
- handful chopped fresh thyme
- sea salt
Instructions
- Mix yeast with warm water until dissolved and leave in warm place to bubble
- Add yeast mix to flour, olive oil and salt and mix until well combined
- Turn dough onto floured surface and knead until smooth and elastic
- Place in oiled bowl, cover with cling film and leave to rise until doubled in size
- Chop onion and fry in olive oil until softened
- When dough has risen, knock back and stretch to fit an oiled swiss roll tin or roll into a rectangle and place on oiled tray
- Leave to rise until doubled in size
- Spread onion on dough and scatter with grated cheese and thyme
- Press fingers into dough to make dimples
- Drizzle with oil and scatter with salt
- Bake gas 5 (200C, fan 180C) for 20 mins until golden

- We ate our bread with tomato relish and roast breast of lamb

Harissa Paste

A fragrant spicy paste

Ingredients
- 2 tsp cumin seeds
- 1 tsp coriander seeds
- 1/2 tsp caraway seeds
- 1/2 tsp fennel seeds
- dried chilli to taste
- 3 cloves garlic
- 1/4 tsp salt
- 1/4 tsp of cinnamon
- 1 tbsp tomato puree
- 2 tbsp olive oil
Instructions
- Put seeds and chilli in dry frying pan and cook until seeds begin to toast
- Grind to a fine powder in spice grinder or pestle & mortar
- Put mix into food processor
- Add garlic, salt, cinnamon, tomato puree and oil
- Pulse to make a coarse paste
Notes
- We used this paste to make Harissa Humous. Also good added to soups and meat sauces.

Harissa Humous

Spicy Humous

Ingredients
- 250g raw chickpeas or 410g tin chickpeas
- 2 large garlic cloves
- Juice of 1 lemon
- 1/2 tsp salt
- 1 tblsp harissa paste
- 4 tblsp olive oil
- Parsley
Instructions
- Soak chickpeas overnight, then simmer until tender (about 1 hour) and drain. Or use tin of chickpeas
- Squeeze lemon
- Press garlic
- Put all ingredients in food processor and whizz until smooth
- Sprinkle with chopped parsley
Notes
- Add more lemon juice and/or olive oil to achieve the consistency you would like.

Stuffed Marrow

A favourite summer supper dish

Ingredients
- 1 kg minced lamb
- 2 onions
- 4 sticks celery
- 1 tblsp paprika
- 2 tsp cinnamon
- 1 tsp chilli powder
- 1 tblsp ground allspice
- 500 g passata
- 6 tomatoes
- 1 kallo beef stock cube
- 1 tblsp olive oil
- 75 g sun dried tomatoes
- 1 tsp rosemary
- 4 cloves garlic
- 2.5 kg marrow
- Grated Cheese
Instructions
- Immerse tomatoes in boiling water and leave for a few mins
- Cut sun dried tomatoes into small pieces
- Chop rosemary
- Drain tomatoes and peel off skins and then chop
- Slice onion and celery, crush garlic and fry in olive oil until softened
- Add minced lamb
- When lamb has browned add passata, spices, sun dried tomato, tomato, beef stock and rosemary
- Simmer until lamb is tender
- Slice marrow and remove seeds and boil rings under tender
- Fill marrow rings with lamb mix
- Top with grated cheese and put in oven until cheese has melted and filling is hot
Notes
- For a meat free filling use cooked green lentils instead of lamb.
- Also good with minced beef or bacon with chicken livers

Ice Cream

Rich custard ice cream

Ingredients
- 4 large egg yolks
- 75 g sugar
- 300 ml milk
- 1 tsp vanilla essence
- 300 ml double cream
Instructions
- Whisk egg yolks and sugar together until thick and pale
- Heat milk until almost boiling
- Pour milk into eggs stirring all the time
- Stir in vanilla and cream
- Pour into ice cream maker.
- If making without a machine put mix in freezer and after about 45 mins as it starts to freeze stir vigorously with hand or electric whisk or stick blender to break up ice crystals
- Repeat every 30 mins until completely frozen (2 to 3 hours)
Notes
- Add different flavours or fruit. We added a few drops of rose water instead of vanilla. Other ideas are raspberries, strawberries, chocolate chips, pistachios, toasted breadcrumbs. Experiment!

Coconut & Oat Crunch Biscuits

Crunchy Golden Biscuits

Ingredients
- 80 g oats
- 80 g coconut
- 140 g plain flour
- 1 level tsp bicarb
- 140 g caster sugar
- 140 g butter
- 2 tblsp golden syrup
Instructions
- Melt butter and golden syrup in pan
- Add remaining ingredients and mix well
- Roll mixture into small balls and place onto a greased baking tray
- Flatten with the back of a spoon
- Bake in oven for approx 20 mins until golden brown
- The biscuits will become crisp when cool
Notes
- Break up biscuits and top with ice cream and fruit to make an ice cream sundae

Meringues

Crunchy Meringues

Ingredients
- 4 egg whites
- 225 g caster sugar
Instructions
- Line baking sheets with non-stick paper
- Whisk egg whites until stiff
- Whisk in half of the sugar gradually until stiff
- Add remaining sugar
- Pipe meringue mixture onto baking sheets
- Bake for about 2 hours until meringues are dry and will lift off the paper easily
Notes
- Excite any desert with a meringue on the top or just eat on their own. We put our meringues on top of summer trifle and blackberry mousse
