Ingredients
  1. 2 large onions
  2. 2 large carrots
  3. 225 g gram flour
  4. 1 tsp salt
  5. 1 tsp baking powder
  6. 1 tsp ground turmeric
  7. 1 tsp cumin seeds
  8. 1 tsp coriander seeds
  9. fresh chilli
Instructions
  1. Peel and grate carrots
  2. Slice onions thinly
  3. Finely chop chilli
  4. Toast cumin and coriander seeds in dry frying pan until browned and then grind
  5. Mix flour with baking powder and salt
  6. Add ground spices and chopped chilli
  7. Add carrot and onions and stir well until flour in absorbed by moisture in vegetables
  8. Add a little water if necessary to form a thick batter that will just drop from a spoon
  9. Fry in hot oil until browned and crisp
Notes
  1. Try using other vegetables such as beetroot or courgette. If using courgette excess moisture will need to be squeezed from the grated courgettes.

Ingredients
  1. 550 g plain flour
  2. 1/2 tsp salt
  3. 20 g fresh yeast
  4. 110 g caster sugar
  5. 50 g butter
  6. 4 egg yolks
  7. 300 ml pint milk
Topping
  1. 2 oz caster sugar
  2. 1 tsp cinnamon
Instructions
  1. Warm the milk and stir in fresh yeast , sugar and leave until bubbly
  2. Rub the butter into the flour
  3. Beat egg yolks and add to yeast mix
  4. Stir in flour, salt and mix to a soft dough
  5. Knead until smooth and elastic
  6. Place in a bowl, cover with clingfilm and leave to rise in a warm place
  7. Knock back risen dough and divide into balls
  8. Make a hole through the centre of each ball with your finger then stretch into circles and put on a greased baking tray to rise
  9. When risen deep fry for about 2 mins on each side until golden
  10. Mix sugar and cinnamon and sprinkle over doughnuts
Notes
  1. Try filling doughnut balls with a tsp of jam. Flatten rounds of dough and place approx 1 tsp of jam in the centre. Pull together the edges of the dough over the jam and squeeze to seal. Leave to rise before frying

Ingredients
  1. 3 eggs
  2. 280 g caster sugar
  3. 170 g butter
  4. 70 g cocoa
  5. 55 g oats
  6. 55 g SR flour
  7. 150 g dark/milk or white chocolate
Instructions
  1. Put butter and cocoa in saucepan and heat gently until butter has melted
  2. Beat together eggs and sugar
  3. Add cocoa mix to egg mix and then stir in flour and oats
  4. Chop chocolate into chunks and add to brownie mix
  5. Pour into tin and bake in oven gas 4 (180 degrees, fan 160 degrees) for approx 20 mins
Notes
  1. Be careful not to overcook, the edges should be risen and cracked but the middle still fairly soft.
  2. Try making in individual mini cake cases
  3. Look good decorated with fresh raspberries and blueberries and dusted with icing sugar.

Ingredients
  1. 100 g butter
  2. 220 ml water
  3. 105 g plain flour
  4. 3 eggs
  5. Pinch salt
  6. Double cream
  7. Milk or dark chocolate
Instructions
  1. Beat eggs
  2. Put butter and water into a saucepan
  3. Heat slowly to melt butter then bring to a rolling boil
  4. When mixture is boiling tip in flour and salt and remove from heat
  5. Stir vigorously until you have a smooth ball of paste
  6. Transfer to mixer and continue to beat
  7. When paste has cooled a little add egg mixture a little at a time until you have a smooth glossy paste
  8. Grease baking tray, hold under tap then shake to ride of excess moisture
  9. Pipe eclairs onto baking tray
  10. Bake at gas 6 (200c, fan 180C) for approx 20 mins until risen and browned.
  11. Cut in half and fill with whipped cream
  12. Break up chocolate and put in jug with a little milk. Heat in microwave for one or two mins and stir well
  13. Spoon melted chocolate over eclairs
Notes
  1. You might not need all of the egg. The mixture should be fairly thick but drop easily off a spoon and stand well when piped onto the tray. Have fun with some different shapes.
  2. Leave plenty of room between eclairs on baking tray to allow them to rise properly in the oven

Ingredients
  1. 150 ml olive oil
  2. 170 g SR flour
  3. 1 tsp bicarbonate soda
  4. 170 g muscovado sugar
  5. 140 g grated carrot
  6. 110 g raisins
  7. grated rind and juice of 1 orange
  8. 3 eggs
  9. 1 tsp mixed spice
  10. 2 tsp cinnamon
  11. 1/2 tsp grated nutmeg
  12. 150 g icing sugar
Instructions
  1. Grate carrot
  2. Zest orange and juice
  3. Beat all ingredients together (except orange juice and icing sugar)
  4. Pour mixture into lined tin
  5. Bake gas mark 3 (160 degrees, fan 140 degrees) for approx 1 hour
  6. Test to see if cake in done by inserting skewer which should come out clean, if covered in wet mix then the cake needs longer in the oven
  7. To make icing sieve icing sugar and stir in orange juice. If icing is too runny add more icing sugar
  8. Spoon icing onto cooled cake

  1. The mix is also good for mini cakes which would need a shorter baking time.

Ingredients
  1. 100 g ground almonds
  2. 125 g plain flour
  3. 1 tsp baking powder
  4. 250 g soft brown sugar
  5. 200 g butter
  6. 75 g desiccated coconut
  7. 2 eggs
  8. 350 g blackberries
Instructions
  1. Put flour, ground almonds, oats and coconut in bowl
  2. Cut butter into small pieces and rub in flour mix until it resembles breadcrumbs
  3. Stir in sugar
  4. Put a cup of the mixture aside for the topping
  5. Stir eggs into the mixture
  6. Spread mixture over the bottom of a lined cake tin (approx 30 cm by 20 cm)
  7. Scatter blackberries over the top and then the saved cup of crumble mix
  8. Bake in oven gas 4 (180 degrees, fan 160 degrees) for about 1 hour until risen and golden
Notes
  1. After 1 hour check that it is cooked by poking with a skewer that should come out clean. If not cooked in the middle put back in the oven for extra 10 mins.
  2. Also good with raspberries instead of blackberries
  3. For gluten free substitute plain flour for gluten free flour

Ingredients
  1. 250 g plain flour
  2. 70 g icing sugar
  3. 125 g butter
  4. 2 egg yolks
For the filling
  1. 4 eggs
  2. 115 g caster sugar
  3. 120 ml double cream
  4. 2 lemons (juice and zest)
For the pastry
  1. Mix flour and icing sugar in bowl
  2. Cut butter into small pieces and rub into flour until mix resembles breadcrumbs
  3. Stir in egg yolks
  4. If pastry is too dry add a little water until the mix binds
  5. Wrap pastry in clingfilm and leave to chill in fridge for about 30 mins
  6. Roll out to line tart tin
  7. Bake in oven gas 4 (180 C, fan 160C) until browned
  8. For the filling beat all the ingredients together (except for the zest) and then sieve
  9. Add lemon zest
  10. Pour filling into baked tart case
  11. Bake in oven gas 3 (160 C, fan 140 C) for about 30 mins until set
Notes
  1. Always keep pastry as cold as possible, cool hands under the cold tap.
  2. Don't make pastry too wet as it will be hard instead of flaky when cooked

Ingredients
  1. 4 egg whites
  2. 225 g caster sugar
Instructions
  1. Line baking sheets with non-stick paper
  2. Whisk egg whites until stiff
  3. Whisk in half of the sugar gradually until stiff
  4. Add remaining sugar
  5. Pipe meringue mixture onto baking sheets
  6. Bake for about 2 hours until meringues are dry and will lift off the paper easily

  1. Excite any desert with a meringue on the top or just eat on their own. We put our meringues on top of summer trifle and blackberry mousse

Ingredients
  1. 150 g white basmati & wild rice
  2. 100 g green beans
  3. 50 g tinned sweetcorn
  4. 50 g frozen peas
  5. 1 red pepper
  6. 1 carrot
  7. 1 apple

  9. 50 g salted cashew nuts
  10. 2 tblps mayonnaise
  11. Parsley
Instructions
  1. Put rice in pan with 1.5 volume of water to rice
  2. Bring to the boil and then simmer with lid until all water has been absorbed
  3. Allow rice to cool
  4. Chop pepper, carrot and apple into chunks
  5. Chop beans and boil in water until tender, then drain
  6. Chop parsley
  7. Mix all ingredients and serve

  1. Use any veg in season. Nice with lightly fried courgettes, raw sugar snap, grapes

Ingredients
  1. 4 sheets gelatine
  2. 4 eggs
  3. 1 lemon
  4. 75 g caster sugar
  5. 250 g blackberries
Instructions
  1. Simmer blackberries in pan without water until softened and then press through a sieve to remove seeds
  2. Soften gelatine in a little water and then add lemon juice and heat in microwave until gelatine has completely dissolved
  3. Add gelatine to blackberry puree
  4. Separate eggs and put egg yolks in a bowl with sugar
  5. Heat yolks and sugar over a pan of simmering water, whisking continuously until mixture becomes paler in cooler and thickens
  6. Allow to cool a little before adding to blackberry and gelatine mix
  7. Beat cream until thick and stir into blackberry mix
  8. Finally beat egg whites to soft peaks and add to mix
  9. Spoon into dishes and put in fridge to set
Notes
  1. Try a mixture of berries. Blackberries with raspberries is good.

  1. 500 g strong flour
  2. 20 g fresh yeast
  3. 1 tsp sugar
  4. 320 ml warm water
  5. 2 tblsp olive oil
  6. 1 tsp salt
Instructions
  1. Cream yeast with sugar and warm water
  2. Add oil and salt
  3. Pour yeast mixture into flour
  4. Mix to form a soft dough
  5. Turn onto a board and knead
  6. Leave in warm place to double in size
  7. Divide dough and roll into rounds
  8. Place on greased tray
  9. Brush with olive oil then spread with sauce, toppings and cheese

Ingredients
  1. 1 kg minced lamb
  2. 2 onions
  3. 4 sticks celery
  4. 1 tblsp paprika
  5. 2 tsp cinnamon
  6. 1 tsp chilli powder
  7. 1 tblsp ground allspice
  8. 500 g passata
  9. 6 tomatoes
  10. 1 kallo beef stock cube
  11. 1 tblsp olive oil
  12. 75 g sun dried tomatoes
  13. 1 tsp rosemary
  14. 4 cloves garlic
  15. 2.5 kg marrow
  16. Grated Cheese
Instructions
  1. Immerse tomatoes in boiling water and leave for a few mins
  2. Cut sun dried tomatoes into small pieces
  3. Chop rosemary
  4. Drain tomatoes and peel off skins and then chop
  5. Slice onion and celery, crush garlic and fry in olive oil until softened
  6. Add minced lamb
  7. When lamb has browned add passata, spices, sun dried tomato, tomato, beef stock and rosemary
  8. Simmer until lamb is tender
  9. Slice marrow and remove seeds and boil rings under tender
  10. Fill marrow rings with lamb mix
  11. Top with grated cheese and put in oven until cheese has melted and filling is hot
Notes
  1. For a meat free filling use cooked green lentils instead of lamb.
  2. Also good with minced beef or bacon with chicken livers
