Ingredients
  1. 400 g chicken breast
Marinade
  1. 100 ml coconut milk
  2. 1/4 tsp turmeric
  3. 1 tblsp chopped lemon grass
  4. 5 lime leaves
  5. 2 cloves garlic
Sauce
  1. 2 tblsp lime juice
  2. 1 tblsp fish sauce
  3. 200 g salted roasted peanuts
  4. 2 cloves garlic
  5. 2 tblsp honey
  6. fresh chilli
  7. 50 ml warm water
Instructions
  1. To make marinade mix coconut milk with turmeric, lemon grass, lime leaves and garlic in blender
  2. Toss chicken in marinade and then put onto sticks
  3. Grill chicken until cooked and serve with satay sauce
  4. To make sauce crush peanuts and garlic
  5. Chop chilli finely
  6. Mix all ingredients and blend with warm water to form a paste
  7. Add more water if paste is too thick
Notes
  1. Leave out chilli if you dont like the heat
  2. Use peanut butter instead of roasted peanuts for an even quicker sauce

Ingredients
  1. 2 sticks lemon grass
  2. 6 shallots
  3. 4 cloves garlic
  4. 1 piece ginger
  5. 400 g chicken thigh meat
  6. 6 lime leaves
  7. 2 leeks
  8. 6 new potatoes
  9. 400 g squash
  10. 1 parsnip
  11. 1 medium aubergine
  12. 1 tblsp soya bean paste (miso)
  13. large handful coriander
  14. large handful mint
Instructions
  1. Chop coriander and mint
  2. Chop all vegetables into chunks
  3. Chop chicken into chunks
  4. Grind lemon grass, shallots, garlic and ginger in pestle and mortar or food processor to make a rough paste and then fry in oil
  5. Add coconut milk and soya bean paste, mix well
  6. Add chicken and chopped vegetables
  7. Simmer until vegetables are tender and chicken is cooked
  8. Stir in chopped herbs
Notes
  1. Leave out chicken for a vegetable soup
  2. Try adding different vegetables in season e.g beans, courgette

Ingredients
  1. 20 rice paper wrappers
  2. 150 g peanuts or prawns
  3. 6 spring onions
  4. 100 g bean sprouts
  5. 100 g sugar snap
  6. 100 g carrots
  7. 1 pointed red pepper
  8. 2 tblsp sweet chilli sauce
  9. 2 tsp soya sauce
  10. 1 tsp fish sauce
  11. 1 tblsp chopped mint
  12. 1 tblsp chopped coriander
  13. 1 tblsp chopped basil
Instructions
  1. Chop all veg into small pieces
  2. Chop herbs
  3. Chop peanuts or prawns
  4. Mix sweet chilli sauce, fish sauce and soya sauce with vegetables, herbs, and peanuts/prawns
  5. Briefly immerse rice paper in a bowl of water until soft (one to two mins)
  6. Remove rice paper from water and place on a dry T towel and allow to dry for about one minute
  7. Place approx 2 tsp of filling mix on each wrapper
  8. Fold wrapper over filling, then fold in sides and roll
  9. Serve with sweet chilli sauce to dip

Ingredients
  1. 150 g cooked Prawns
  2. 1 tblsp chopped chives
  3. 100 g bean sprouts
Batter
  1. 225 g plain flour
  2. 1/2 tsp salt
  3. 4 tsp baking powder
  4. 2 egg
  5. 300 ml milk
Sauce
  1. 25 g sugar
  2. 2 tblsp white wine vinegar
  3. 2 tblsp water
  4. 2 tblsp Worcester sauce
  5. 1 tsp sweet chilli sauce
  6. 25 g butter
Instructions
  1. Put all sauce ingredients in a pan and simmer until thickened
  2. Chop prawns into small pieces
  3. Chop chives
  4. To make batter separate eggs
  5. Beat flour, baking powder, egg yolks and milk to form a thick batter
  6. Whisk egg whites until stiff and fold into batter
  7. Stir in prawns, bean sprout and chives
  8. Heat and grease a griddle or heavy frying pan with olive oil
  9. Pour with a ladle about 2 tblsp mixture onto griddle to form pancakes
  10. Cook gently for about 5 mins until pancakes start to bubble
  11. Turn over pancakes cooking for a further 2-3 mins until both sides are browned
  12. Serve pancakes with sweet chilli sauce
Notes
  1. Try adding different herbs e.g mint and/or additional vegetables e.g courgette, finely shredded cabbage

Ingredients
  1. 500 g Rhubarb
  2. 1 Orange
  3. Golden syrup to taste
  4. 150 g butter
  5. 200 g caster sugar
  6. 150 g ground almonds
  7. 150 g plain flour
  8. 1 egg
Instructions
  1. Zest and juice orange
  2. Chop rhubarb into chunks, wash and put in pan with orange juice and zest
  3. Simmer until rhubarb is completely soft
  4. Sweeten with golden syrup
  5. Cream butter and sugar together
  6. Add remaining ingredients and mix to a soft dough
  7. Form dough into small balls
  8. Put rhubarb into a baking dish and top with small balls of dough mix
  9. Bake gas 5 (200 C) until dough has risen and browned

Ingredients
  1. 50 g granulated sugar
  2. 1/2 tin coconut milk
  3. 300 g cooked sticky rice
  4. Fresh fruit (banana, mango, pineapple)
  5. 3 tblsp sesame seeds
Instructions
  1. oast sesame seeds in dry frying pan
  2. Cool and crush a little with a pinch of salt
  3. Heat sugar in heavy bottomed pan until it starts to caramelise (turn golden brown)
  4. Add coconut milk to sugar and mix well continuing to heat
  5. Stir in rice and simmer until most of the liquid has been absorbed and the rice is sticky
  6. Serve with fresh fruit and sprinkled with sesame seeds
Notes
  1. You can buy Thai sticky rice (white & black) in Asian Supermarkets. The rice needs to be washed well, soaked overnight and steamed for about 30 - 40 mins

Ingredients
  1. 150 g sesame seeds
  2. 170 g sugar
  3. 50 g honey
  4. 1 tblsp water
  5. pinch salt
  6. 1 tsp vanilla extract
  7. 40 g butter
  8. 1/4 tsp baking soda
Instructions
  1. Put sugar, honey, salt and water into a thick bottomed pan and heat until sugar has dissolved
  2. Stir in sesame seeds
  3. Cook stirring continuously until mixture forms a caramel colour (about 5 to 10 mins). Temp should be 300 degrees F
  4. Stir in vanilla and butter and when butter has melted add baking soda
  5. Pour mixture onto non stick baking sheet
  6. When completely cooled and hardened break into pieces
Notes
  1. Be careful as the sugar reaches very high temperatures and could badly burn your skin
  2. This recipe is also good with peanuts instead of sesame seeds

Ingredients
  1. 75 g sugar
  2. 4 egg yolks
  3. 300 ml coconut milk
  4. 300 ml double cream
  5. grated coconut
Instructions
  1. Whisk egg yolks and sugar together until thick and pale
  2. Heat coconut milk and pour into whisked eggs
  3. Add double cream and grated coconut
  4. Pour into ice cream maker
Notes
  1. To make without an ice cream maker pour cooled mix into a wide container (plastic or metal) and freeze for about 45 mins. Remove from freezer and stir vigorously to break up frozen sections. Check every 30 mins stirring as it freezes. You can use a hand held electric beater or stick blender. It should be ready in about 2 to 3 hours

Dough
  1. 450 g strong flour
  2. 25 g fresh yeast
  3. 1 tsp caster sugar
  4. 1 tsp salt
  5. 1 beaten egg
  6. 50 g butter
  7. 250 ml milk
Filling
  1. 150 g mixed dried fruit
  2. 25 g mixed peel
  3. 50 g soft brown sugar
  4. 1 tsp mixed spice
  5. 1 tsp ground nutmeg
  6. zest of 1 lemon
  7. 20 g melted butter
Icing
  1. 200 g icing sugar
  2. warm water to mix
Instructions
  1. Heat milk to just warm and blend with yeast
  2. Put flour, salt and sugar in a large bowl and rub in the butter
  3. Add yeast mix and beaten egg to dry ingredients and stir to form a firm dough
  4. Turn out onto a board and knead until smooth
  5. Leave in covered bowl to rest in a warm place for approx 10 mins
  6. Mix all filling ingredients together
  7. Roll out dough into a rectangle about 1 cm thick
  8. Brush melted butter and cover with filling
  9. Roll and cut into rounds
  10. Placed rounds on greased baking tray and leave to rise until doubled in size
  11. When risen bake in oven gas 4 (180C, fan 160C) until golden brown
  12. Make icing by mixing icing sugar with a little warm water to form a thick runny paste
  13. When buns are cool decorate with icing

Ingredients
  1. 700 g strong white plain flour
  2. 45 g fresh yeast
  3. 8 floz warm milk
  4. 4 floz warm water
  5. 1 ½ tsp salt
  6. 1 tsp mixed spice
  7. 1 tsp ground cinnamon
  8. 1 tsp grated nutmeg
  9. 85 g caster sugar
  10. 85 g butter
  11. 2 eggs
  12. 150 g currants
  13. 85 g chopped mixed peel
Egg Wash
  1. 1 egg
  2. 1 tblsp milk
Crosses
  1. 3 tbsp plain flour
  2. ½ tbsp caster sugar
  3. 2 tbsp water
Glaze
  1. 50 g sugar
  2. 4 tbsp water
Instructions
  1. Warm water and milk in pan or microwave then add 1 tsp sugar and yeast, stir until dissolved and leave for 5 - 10 mins until frothy
  2. Melt butter in pan and leave to cool
  3. Add all ingredients with butter to yeast mix and turn onto board and knead until elastic and smooth
  4. Leave to rise in warm place covered until doubled in size
  5. Knock down and lightly knead, then form into balls
  6. Place on greased baking tray and leave to rise for second time
  7. Mix egg with milk to make egg wash
  8. Mix flour, sugar and water into a smooth thick paste for the crosses and put into piping bag
  9. When buns have risen pipe two lines of flour paste over buns in the shape of a cross
  10. Bake in oven gas 4 (180c fan 160c) for about 10 mins then remove and brush with egg wash, put back in oven for further 10 - 15 mins until browned
  11. Put sugar and water in pan and boil rapidly for 2 mins until sugar has dissolved and when buns are still hot brush with the sugar glaze
Notes
  1. Baking the buns for 10 mins before brushing with egg wash will avoid squashing the buns. Delicious warm from the oven or toasted with butter. Keep well in airtight container.

Ingredients
  1. vegetable oil for deep frying
Dough
  1. 450 g plain flour
  2. 1 tsp salt
  3. 15g fresh yeast
  4. 100 g caster sugar
  5. 50 g butter
  6. 4 egg yolks
  7. 300 ml pint milk
Topping
  1. 2 oz caster sugar
  2. 1 tsp cinnamon
Instructions
  1. Warm the milk
  2. Cream fresh yeast with warm milk, sugar and a little flour and leave until bubbly
  3. Rub the butter into the remaining flour
  4. Beat egg yolks and add to yeast mix
  5. Stir in flour, salt and mix to a soft dough
  6. Turn out on a board and knead until smooth and elastic
  7. Place in a bowl, cover with clingfilm and leave to rise in a warm place
  8. Knock back risen dough and knead again for a few mins
  9. Divide dough into balls and make a hole through the centre with your finger
  10. Stretch into circles and put on greased baking tray to rise
  11. Deep fry for about 2 mins on each side
  12. Mix sugar and cinnamon and sprinkle over doughnuts
Notes
  1. If you are very clever you can put a tsp of jam inside each doughnut. But be careful to squeeze the edges together well to seal or the jam will burn while frying!
