Ingredients
  1. 110 g butter
  2. 110 g caster sugar
  3. 220 g plain flour
  4. 1 egg
  5. 80 g currants
  6. ½ tsp cinnamon
  7. ½ tsp mixed spice
  8. 1 egg white
  9. caster sugar
Instructions
  1. Beat butter and sugar in bowl until creamy
  2. Add flour, egg, spices and currants to creamed butter
  3. Beat until well mixed and a dough is formed
  4. Roll out mixture thinly
  5. Cut into rounds and place on greased tray
  6. Brush with egg white and sprinkle with caster sugar
  7. Bake at gas 4 (180c, fan 160c) for approx 15 mins until browned
Notes
  1. If you like mixed peel add 50 g and if you like chocolate add 75 g chopped dark chocolate

Rhubarb Cobbler
Wonderful way to enjoy spring rhubarb

Ingredients
  1. 500 g Rhubarb
  2. 1 Orange
  3. Golden syrup to taste
Topping
  1. 150 g butter
  2. 200 g caster sugar
  3. 150 g ground almonds
  4. 150 g plain flour
  5. 1 egg
Instructions
  1. Zest and juice orange
  2. Chop rhubarb into chunks, wash and put in pan with orange juice and zest
  3. Simmer until rhubarb is completely soft and sweeten with golden syrup
  4. Cream butter and sugar together
  5. Add remaining ingredients and mix to a soft dough
  6. Form dough into small balls
  7. Put rhubarb into a baking dish and top with small balls of dough mix
  8. Bake gas 5 (200 C) until dough has risen and browned
Notes
  1. Don't add water when cooking rhubarb or it will be too wet. Topping is also good on mixed berries (cook until just soft)

Hot Cross Buns

Ingredients
  1. 700 g strong white plain flour
  2. 45 g fresh yeast
  3. 8 floz warm milk
  4. 4 floz warm water
  5. 1 ½ tsp salt
  6. 1 tsp mixed spice
  7. 1 tsp ground cinnamon
  8. 1 tsp grated nutmeg
  9. 85 g caster sugar
  10. 85 g butter
  11. 2 eggs
  12. 150 g currants
  13. 85 g chopped mixed peel
Egg Wash
  1. 1 egg
  2. 1 tblsp milk
Crosses
  1. 3 tbsp plain flour
  2. ½ tbsp caster sugar
  3. 2 tbsp water
Glaze
  1. 50 g sugar
  2. 4 tbsp water
Instructions
  1. Warm water and milk in pan or microwave then add 1 tsp sugar and yeast, stir until dissolved and leave for 5 - 10 mins until frothy
  2. Melt butter in pan and leave to cool
  3. Add all ingredients with butter to yeast mix and turn onto board and knead until elastic and smooth
  4. Leave to rise in warm place covered until doubled in size
  5. Knock down and lightly knead, then form into balls
  6. Place on greased baking tray and leave to rise for second time
  7. Mix egg with milk to make egg wash
  8. Mix flour, sugar and water into a smooth thick paste for the crosses and put into piping bag
  9. When buns have risen pipe two lines of flour paste over buns in the shape of a cross
  10. Bake in oven gas 4 (180c fan 160c) for about 10 mins then remove and brush with egg wash, put back in oven for further 10 - 15 mins until browned
  11. Put sugar and water in pan and boil rapidly for 2 mins until sugar has dissolved and when buns are still hot brush with the sugar glaze
Notes
  1. Baking the buns for 10 mins before brushing with egg wash will avoid squashing the buns. Delicious warm from the oven or toasted with butter. Keep well in airtight container.
