Risotto Balls
  1. 500 g risotto rice
  2. 800 ml hot chicken stock
  3. 1 tblsp butter
  4. 1 beaten egg
  5. 50 g grated parmesan
  6. 6 rashers smoked bacon
  7. 100 g frozen peas
  8. 200 g any good melting cheese (mozzarella, edam etc)
Coating
  1. plain flour
  2. 2 beaten eggs
  3. Salt & pepper
  4. 300 g breadcrumbs
  5. Oil to fry
Instructions
  1. Chop bacon into small pieces and fry until crisp
  2. Melt butter in pan, add rice and fry for a few mins until rice is glossy
  3. Add a ladleful of stock and stir until stock has been absorbed
  4. Repeat until all the stock has been used and the rice is tender
  5. Leave to cool and then stir in beaten egg, peas, bacon and parmesan
  6. Wet hands with cold water and form rice into balls
  7. Press a lump of cheese (about 1 tsp size) into the middle of the rice balls and re form into rounds
  8. Season beaten eggs with salt and pepper
  9. Dip rice balls first into flour then egg mix then roll in breadcrumbs
  10. Fry in hot oil until golden brown
Notes
  1. Keep warm in the oven before serving

Hot Chocolate Pudding

Ingredients
  1. 115 g dark chocolate
  2. 85 g butter
  3. 85 g plain flour
  4. 55 g caster sugar
  5. 2 large eggs
  6. 2 large egg yolks
Instructions
  1. Melt chocolate and butter in bowl over hot water
  2. Whisk eggs and sugar together until frothy
  3. Add cooled chocolate mixture to eggs
  4. Fold in flour
  5. Put into small greased pudding basins
  6. Bake in hot oven (gas 7, 210c fan 190c) for 9 mins
  7. Centre of puddings should still be soft

  1. Good with cream or ice cream

Pizza Dough
  1. 500 g strong flour
  2. 20 g fresh yeast
  3. 1 tsp sugar
  4. 320 ml warm water
  5. 2 tblsp olive oil
  6. 1 tsp salt
Tomato Sauce for Pizza
  1. 3 cloves garlic
  2. 2 onions
  3. 10 tomatoes
  4. 3 tblsp tomato puree
  5. 2 tsp sugar
  6. 1/2 tsp salt
To Make Pizza Dough
  1. Cream yeast with sugar and warm water
  2. Add oil and salt
  3. Pour yeast mixture into flour
  4. Mix to form a soft dough
  5. Turn onto a board and knead
  6. Leave in warm place to double in size
  7. Divide dough and roll into rounds
  8. Place on greased tray
  9. Brush with olive oil then spread with sauce, toppings and cheese
To Make Tomato Sauce
  1. Crush garlic and chop onions finely
  2. Fry onion and garlic in olive oil
  3. Chop tomatoes and add to pan
  4. Add tomato puree, sugar, and salt and simmer until tomatoes are soft
  5. Add basil and put in liquidiser until smooth
  6. Spread on pizza base
Notes
  1. Sausage balls make a great topping. Open a sausage and form into small balls. Pineapple is my favourite.
