Italian Risotto Balls

Risotto Balls
- 500 g risotto rice
- 800 ml hot chicken stock
- 1 tblsp butter
- 1 beaten egg
- 50 g grated parmesan
- 6 rashers smoked bacon
- 100 g frozen peas
- 200 g any good melting cheese (mozzarella, edam etc)
Coating
- plain flour
- 2 beaten eggs
- Salt & pepper
- 300 g breadcrumbs
- Oil to fry
Instructions
- Chop bacon into small pieces and fry until crisp
- Melt butter in pan, add rice and fry for a few mins until rice is glossy
- Add a ladleful of stock and stir until stock has been absorbed
- Repeat until all the stock has been used and the rice is tender
- Leave to cool and then stir in beaten egg, peas, bacon and parmesan
- Wet hands with cold water and form rice into balls
- Press a lump of cheese (about 1 tsp size) into the middle of the rice balls and re form into rounds
- Season beaten eggs with salt and pepper
- Dip rice balls first into flour then egg mix then roll in breadcrumbs
- Fry in hot oil until golden brown
Notes
- Keep warm in the oven before serving

Hot Chocolate Pudding

Wonderful, soft oozing chocolate

Ingredients
- 115 g dark chocolate
- 85 g butter
- 85 g plain flour
- 55 g caster sugar
- 2 large eggs
- 2 large egg yolks
Instructions
- Melt chocolate and butter in bowl over hot water
- Whisk eggs and sugar together until frothy
- Add cooled chocolate mixture to eggs
- Fold in flour
- Put into small greased pudding basins
- Bake in hot oven (gas 7, 210c fan 190c) for 9 mins
- Centre of puddings should still be soft

- Good with cream or ice cream

Pizza Dough and Topping

Pizza Dough
- 500 g strong flour
- 20 g fresh yeast
- 1 tsp sugar
- 320 ml warm water
- 2 tblsp olive oil
- 1 tsp salt
Tomato Sauce for Pizza
- 3 cloves garlic
- 2 onions
- 10 tomatoes
- 3 tblsp tomato puree
- 2 tsp sugar
- 1/2 tsp salt
To Make Pizza Dough
- Cream yeast with sugar and warm water
- Add oil and salt
- Pour yeast mixture into flour
- Mix to form a soft dough
- Turn onto a board and knead
- Leave in warm place to double in size
- Divide dough and roll into rounds
- Place on greased tray
- Brush with olive oil then spread with sauce, toppings and cheese
To Make Tomato Sauce
- Crush garlic and chop onions finely
- Fry onion and garlic in olive oil
- Chop tomatoes and add to pan
- Add tomato puree, sugar, and salt and simmer until tomatoes are soft
- Add basil and put in liquidiser until smooth
- Spread on pizza base
Notes
- Sausage balls make a great topping. Open a sausage and form into small balls. Pineapple is my favourite.
