Ingredients
- 2 large onions
- 2 large carrots
- 225 g gram flour
- 1 tsp salt
- 1 tsp baking powder
- 1 tsp ground turmeric
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- fresh chilli
Instructions
- Peel and grate carrots
- Slice onions thinly
- Finely chop chilli
- Toast cumin and coriander seeds in dry frying pan until browned and then grind
- Mix flour with baking powder and salt
- Add ground spices and chopped chilli
- Add carrot and onions and stir well until flour in absorbed by moisture in vegetables
- Add a little water if necessary to form a thick batter that will just drop from a spoon
- Fry in hot oil until browned and crisp
Notes
- Try using other vegetables such as beetroot or courgette. If using courgette excess moisture will need to be squeezed from the grated courgettes.

Doughnuts

Ingredients
- 550 g plain flour
- 1/2 tsp salt
- 20 g fresh yeast
- 110 g caster sugar
- 50 g butter
- 4 egg yolks
- 300 ml pint milk
Topping
- 2 oz caster sugar
- 1 tsp cinnamon
Instructions
- Warm the milk and stir in fresh yeast , sugar and leave until bubbly
- Rub the butter into the flour
- Beat egg yolks and add to yeast mix
- Stir in flour, salt and mix to a soft dough
- Knead until smooth and elastic
- Place in a bowl, cover with clingfilm and leave to rise in a warm place
- Knock back risen dough and divide into balls
- Make a hole through the centre of each ball with your finger then stretch into circles and put on a greased baking tray to rise
- When risen deep fry for about 2 mins on each side until golden
- Mix sugar and cinnamon and sprinkle over doughnuts
Notes
- Try filling doughnut balls with a tsp of jam. Flatten rounds of dough and place approx 1 tsp of jam in the centre. Pull together the edges of the dough over the jam and squeeze to seal. Leave to rise before frying

Chocolate Brownies

Ingredients
- 3 eggs
- 280 g caster sugar
- 170 g butter
- 70 g cocoa
- 55 g oats
- 55 g SR flour
- 150 g dark/milk or white chocolate
Instructions
- Put butter and cocoa in saucepan and heat gently until butter has melted
- Beat together eggs and sugar
- Add cocoa mix to egg mix and then stir in flour and oats
- Chop chocolate into chunks and add to brownie mix
- Pour into tin and bake in oven gas 4 (180 degrees, fan 160 degrees) for approx 20 mins
Notes
- Be careful not to overcook, the edges should be risen and cracked but the middle still fairly soft.
- Try making in individual mini cake cases
- Look good decorated with fresh raspberries and blueberries and dusted with icing sugar.

Chocolate Eclairs

Ingredients
- 100 g butter
- 220 ml water
- 105 g plain flour
- 3 eggs
- Pinch salt
- Double cream
- Milk or dark chocolate
Instructions
- Beat eggs
- Put butter and water into a saucepan
- Heat slowly to melt butter then bring to a rolling boil
- When mixture is boiling tip in flour and salt and remove from heat
- Stir vigorously until you have a smooth ball of paste
- Transfer to mixer and continue to beat
- When paste has cooled a little add egg mixture a little at a time until you have a smooth glossy paste
- Grease baking tray, hold under tap then shake to ride of excess moisture
- Pipe eclairs onto baking tray
- Bake at gas 6 (200c, fan 180C) for approx 20 mins until risen and browned.
- Cut in half and fill with whipped cream
- Break up chocolate and put in jug with a little milk. Heat in microwave for one or two mins and stir well
- Spoon melted chocolate over eclairs
Notes
- You might not need all of the egg. The mixture should be fairly thick but drop easily off a spoon and stand well when piped onto the tray. Have fun with some different shapes.
- Leave plenty of room between eclairs on baking tray to allow them to rise properly in the oven

Carrot Cake

Ingredients
- 150 ml olive oil
- 170 g SR flour
- 1 tsp bicarbonate soda
- 170 g muscovado sugar
- 140 g grated carrot
- 110 g raisins
- grated rind and juice of 1 orange
- 3 eggs
- 1 tsp mixed spice
- 2 tsp cinnamon
- 1/2 tsp grated nutmeg
- 150 g icing sugar
Instructions
- Grate carrot
- Zest orange and juice
- Beat all ingredients together (except orange juice and icing sugar)
- Pour mixture into lined tin
- Bake gas mark 3 (160 degrees, fan 140 degrees) for approx 1 hour
- Test to see if cake in done by inserting skewer which should come out clean, if covered in wet mix then the cake needs longer in the oven
- To make icing sieve icing sugar and stir in orange juice. If icing is too runny add more icing sugar
- Spoon icing onto cooled cake
Notes
- The mix is also good for mini cakes which would need a shorter baking time.

Almond, Blackberry & Coconut Squares

Ingredients
- 100 g ground almonds
- 125 g plain flour
- 1 tsp baking powder
- 250 g soft brown sugar
- 200 g butter
- 75 g desiccated coconut
- 2 eggs
- 350 g blackberries
Instructions
- Put flour, ground almonds, oats and coconut in bowl
- Cut butter into small pieces and rub in flour mix until it resembles breadcrumbs
- Stir in sugar
- Put a cup of the mixture aside for the topping
- Stir eggs into the mixture
- Spread mixture over the bottom of a lined cake tin (approx 30 cm by 20 cm)
- Scatter blackberries over the top and then the saved cup of crumble mix
- Bake in oven gas 4 (180 degrees, fan 160 degrees) for about 1 hour until risen and golden
Notes
- After 1 hour check that it is cooked by poking with a skewer that should come out clean. If not cooked in the middle put back in the oven for extra 10 mins.
- Also good with raspberries instead of blackberries
- For gluten free substitute plain flour for gluten free flour

Lemon Tarts

Ingredients
- 250 g plain flour
- 70 g icing sugar
- 125 g butter
- 2 egg yolks
For the filling
- 4 eggs
- 115 g caster sugar
- 120 ml double cream
- 2 lemons (juice and zest)
For the pastry
- Mix flour and icing sugar in bowl
- Cut butter into small pieces and rub into flour until mix resembles breadcrumbs
- Stir in egg yolks
- If pastry is too dry add a little water until the mix binds
- Wrap pastry in clingfilm and leave to chill in fridge for about 30 mins
- Roll out to line tart tin
- Bake in oven gas 4 (180 C, fan 160C) until browned
- For the filling beat all the ingredients together (except for the zest) and then sieve
- Add lemon zest
- Pour filling into baked tart case
- Bake in oven gas 3 (160 C, fan 140 C) for about 30 mins until set
Notes
- Always keep pastry as cold as possible, cool hands under the cold tap.
- Don't make pastry too wet as it will be hard instead of flaky when cooked

Ingredients
- 4 egg whites
- 225 g caster sugar
Instructions
- Line baking sheets with non-stick paper
- Whisk egg whites until stiff
- Whisk in half of the sugar gradually until stiff
- Add remaining sugar
- Pipe meringue mixture onto baking sheets
- Bake for about 2 hours until meringues are dry and will lift off the paper easily

- Excite any desert with a meringue on the top or just eat on their own. We put our meringues on top of summer trifle and blackberry mousse

Colourful Rice Salad

Ingredients
- 150 g white basmati & wild rice
- 100 g green beans
- 50 g tinned sweetcorn
- 50 g frozen peas
- 1 red pepper
- 1 carrot
- 1 apple
- 50 g raisins
- 50 g salted cashew nuts
- 2 tblps mayonnaise
- Parsley
Instructions
- Put rice in pan with 1.5 volume of water to rice
- Bring to the boil and then simmer with lid until all water has been absorbed
- Allow rice to cool
- Chop pepper, carrot and apple into chunks
- Chop beans and boil in water until tender, then drain
- Chop parsley
- Mix all ingredients and serve

- Use any veg in season. Nice with lightly fried courgettes, raw sugar snap, grapes

Blackberry Mousse

Ingredients
- 4 sheets gelatine
- 4 eggs
- 1 lemon
- 75 g caster sugar
- 250 g blackberries
Instructions
- Simmer blackberries in pan without water until softened and then press through a sieve to remove seeds
- Soften gelatine in a little water and then add lemon juice and heat in microwave until gelatine has completely dissolved
- Add gelatine to blackberry puree
- Separate eggs and put egg yolks in a bowl with sugar
- Heat yolks and sugar over a pan of simmering water, whisking continuously until mixture becomes paler in cooler and thickens
- Allow to cool a little before adding to blackberry and gelatine mix
- Beat cream until thick and stir into blackberry mix
- Finally beat egg whites to soft peaks and add to mix
- Spoon into dishes and put in fridge to set

- Try a mixture of berries. Blackberries with raspberries is good.

- 500 g strong flour
- 20 g fresh yeast
- 1 tsp sugar
- 320 ml warm water
- 2 tblsp olive oil
- 1 tsp salt
Instructions
- Cream yeast with sugar and warm water
- Add oil and salt
- Pour yeast mixture into flour
- Mix to form a soft dough
- Turn onto a board and knead
- Leave in warm place to double in size
- Divide dough and roll into rounds
- Place on greased tray
- Brush with olive oil then spread with sauce, toppings and cheese

A favourite summer supper dish

Ingredients
- 1 kg minced lamb
- 2 onions
- 4 sticks celery
- 1 tblsp paprika
- 2 tsp cinnamon
- 1 tsp chilli powder
- 1 tblsp ground allspice
- 500 g passata
- 6 tomatoes
- 1 kallo beef stock cube
- 1 tblsp olive oil
- 75 g sun dried tomatoes
- 1 tsp rosemary
- 4 cloves garlic
- 2.5 kg marrow
- Grated Cheese
Instructions
- Immerse tomatoes in boiling water and leave for a few mins
- Cut sun dried tomatoes into small pieces
- Chop rosemary
- Drain tomatoes and peel off skins and then chop
- Slice onion and celery, crush garlic and fry in olive oil until softened
- Add minced lamb
- When lamb has browned add passata, spices, sun dried tomato, tomato, beef stock and rosemary
- Simmer until lamb is tender
- Slice marrow and remove seeds and boil rings under tender
- Fill marrow rings with lamb mix
- Top with grated cheese and put in oven until cheese has melted and filling is hot
Notes
- For a meat free filling use cooked green lentils instead of lamb.
- Also good with minced beef or bacon with chicken livers
